20g caster sugar

Whisk Whites: Whisk egg whites with lemon juice until soft peaks form, then gradually whisk in the sugar until firm.
Combine: Briskly whisk 1/3 of the whites into the warm chocolate. Gently fold in the remaining whites.
Set: Pour into glasses and refrigerate for 6–12 hours.
