Bread pakoda
Bread pakora is a popular Indian street food made by deep-frying bread slices coated in a spiced gram flour (besan) batter. It is often stuffed with a zesty mashed potato filling.
Bread: 4–6 slices of white or sandwich bread.
Besan Batter: 1 cup gram flour (besan), 1/4 cup rice flour (for extra crispiness), a pinch of baking soda, salt, red chilli powder, turmeric, and ajwain (carom seeds).
Potato Stuffing: 2–3 boiled and mashed potatoes, green chillies, ginger-garlic paste, coriander leaves, garam masala, and amchur (dry mango powder).
Other: Oil for deep frying and green chutney for spreading.
Step-by-Step Instructions
Prepare the Potato Filling: Heat 1 tbsp oil in a pan. Sauté cumin seeds, ginger, garlic, and green chillies. Add the mashed potatoes and dry spices (turmeric, chilli powder, garam masala, amchur). Mix well and garnish with fresh coriander.
Make the Besan Batter: In a bowl, whisk together besan, rice flour, spices, and salt. Gradually add water to make a smooth, thick batter that can coat the back of a spoon.
Assemble the Sandwiches: Spread a layer of green chutney on a bread slice, then add a generous layer of the potato mixture. Cover with another slice of bread and press gently.
Cut the Bread: Slice the sandwich diagonally to form two or four triangles.
Deep Fry: Heat oil in a kadai (deep pan). Dip each triangle into the besan batter, ensuring it is fully coated on all sides. Carefully slide it into the hot oil and fry on medium heat until golden brown and crispy.
